Healthy Taco Rice

  1. Let's make the meat sauce.
  2. Stir fry the ground beef without oil.
  3. Drain off any rendered fat.
  4. Season with salt and coarsely ground black pepper, add the onion, bamboo shoot and a little sake, and stir fry.
  5. Add whatever herbs and spices you have on hand, and as much as you like.
  6. You can add red chili powder, oregano, paprika, nutmeg, black pepper, but the chili powder is a must.
  7. Add a can of crushed tomatoes (juice and all) and one bay leaf.
  8. Flavor with ketchup, Worcestershire sauce, soy sauce, sugar, salt and pepper.
  9. Adjust the quantity to your preference as you taste.
  10. Even if you don't measure the ingredients, just taste as it cooks.
  11. When there's no liquid left in the pan, it's done.
  12. Prepare the salsa.
  13. Combine the salsa ingredients, adjust the seasoning with salt and pepper, and it's done.
  14. Add Tabasco to taste.
  15. Serve rice in a bowl, top with lots of vegetables, salsa, a generous portion of the meat sauce, cheese, and parsley.
  16. Finished!!
  17. Add more Tabasco to taste.
