Tinklee's Chicken Quesadillas

  1. in fry pan heat oil over med-high heat, add cut up chicken, cook until chicken is done
  2. add seasoning packet and water, turn down to low, simmer until thick
  3. divide chicken into 8 portions(I just divide in the pan) place one serving of the chicken mixture in the middle of the tortilla
  4. divide cheese into 8 portions, place one serving on top of chicken, fold tortilla over in half
  5. heat pan to fry tortillas, I add just a touch of oil at a time to the pan, fry until tortilla is golden brown, then flip and fry the other side, when both sides are golden brown remove and place on a paper towel(brown paper sack works best), and slice into quarters and serve
  6. I serve with sour cream, salsa
  7. olives can be added if you want, or peppers to the chicken and cheese
