Tinklee's Chicken Quesadillas
- 1 lb chicken-- cut up
- 1 tbsp cooking oil (to cook chicken in)
- 1 lb shredded cheddar cheese
- 1 packages taco seasoning mix( i like taco bell)
- 1/2 cup water
- 8 flour tortillas
- 1 tbsp cooking oil(to fry quesadillas)
- in fry pan heat oil over med-high heat, add cut up chicken, cook until chicken is done
- add seasoning packet and water, turn down to low, simmer until thick
- divide chicken into 8 portions(I just divide in the pan) place one serving of the chicken mixture in the middle of the tortilla
- divide cheese into 8 portions, place one serving on top of chicken, fold tortilla over in half
- heat pan to fry tortillas, I add just a touch of oil at a time to the pan, fry until tortilla is golden brown, then flip and fry the other side, when both sides are golden brown remove and place on a paper towel(brown paper sack works best), and slice into quarters and serve
- I serve with sour cream, salsa
- olives can be added if you want, or peppers to the chicken and cheese
