Asparagus au Gratin
- 1 1/2 pounds asparagus (about 24 asparagus)
- 2 ounces shredded parmesan cheese (about 3/4 cup)
- 1/4 cup Italian breadcrumbs
- 2 tablespoons grapeseed oil
- 1/2 teaspoon dry mustard
- 1 tablespoon dry parsley
- Salt and pepper to taste
- Preheat the oven to 400F and prepare a steamer.
- Trim the asparagus and add them to the steamer basket.
- Cook for 2 minutes covered.
- Transfer the asparagus to a greased baking sheet.
- In a bowl, mix together the cheese, breadcrumbs, oil, mustard, parsley, and season to taste.
- Spread over the asparagus and bake for 10 minutes or until the mixture is golden brown.
