Chili Con Carne
- 2 large onions, diced
- 4 garlic cloves
- 4 teaspoons olive oil
- 2 lbs lean ground beef
- 1 (28 ounce) can plum tomatoes, diced
- 3 tablespoons chili powder
- 2 tablespoons ground cumin
- 2 tablespoons oregano leaves
- 1 teaspoon coriander
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 2 jalapeno peppers, diced
- 1 cup green pepper, diced
- 1 cup carrot, diced
- 1 cup celery, diced
- In a skillet, heat oil and saute the onion and garlic until they are softened.
- Add the meat and brown.
- Add the can of tomatoes and all the seasonings. Heat until the mixture is bubbly, reduce the heat and cover. Simmer for about 30 minutes.
- Add the jalapeno peppers, green peppers, carrots and celery. Simmer for about 20 minutes longer or until the carrots are softened.
