Cheapo Cioppino
- 1 onion, diced
- 1 tablespoon canola oil
- 3 carrots, diced
- 3 celery ribs, diced
- 1 cup white wine
- 1 (28 ounce) can diced tomatoes
- 2 cups water
- 1 tablespoon anchovy paste
- 2 large bay leaves
- 1 teaspoon thyme
- 12 teaspoon garlic powder
- 12 teaspoon black pepper
- 12 teaspoon salt
- 12 teaspoon cholula hot sauce
- 3 small red potatoes, diced
- 1 12 lbs cod, cut up
- Saute onions in oil until almost translucent.
- Add celery and carrots and a little bit of the wine and saute for 5 minutes.
- Add tomatoes including juice, water, and wine, and seasonings and simmer covered for 45 minutes.
- Add potatoes and cook until tender.
- Add cut up cod and simmer until falls apart.
- Add more salt if desired, it's up to you.
- Serve with favorite croutons or toasted bread.
