Black Bean With Shrimp Recipe
- 1 pound black beans
- 3 c. water
- 1/4 teaspoon grnd cumin
- 1/4 teaspoon oregano
- 2 bay leaves
- 1 1/2 stalks celery, finely minced
- 1 yellow onion
- 2 garlic cloves
- 1 med. tomato
- 2 c. chicken stock
- 1/2 pound raw shrimp
- 1 tbsp. sherry
- 1 tbsp. white vinegar
- Cook beans in water with cumin, bay leaves, oregano, and celery till beans are tender.
- Remove bay leaf.
- Saute/fry onion and garlic slivers in extra virgin olive oil.
- Add in tomato; cook 3 min.
- Add in chicken stock; simmer.
- Mix all in blender till smooth.
- Cut shrimp into 1/2-inch pcs.
- Add in to mix.
- Cook 2 min.
- Combine all ingredients; add in sherry and stir.
- Just prior to serving, add in vinegar; stir.
- Serve with thin sliced lemon rings.
