Wild Rice Pilaf

  1. Prepare rice mix as label directs, but do not add butter or margarine.
  2. Meanwhile, in microwave-safe small bowl, place mushrooms and oil.
  3. Cover bowl with vented plastic wrap.
  4. Cook mushrooms in microwave oven on High 2 minutes, stirring once halfway through cooking.
  5. Set aside.
  6. When rice is done, stir in mushroom mixture, parsley, and lemon peel.
