Wild Rice Pilaf
- 1 box long-grain and wild rice mix
- 1 package sliced mixed wild mushrooms
- 1 tbsp. olive oil
- 1/4 c. fresh parsley leaves
- 1/2 tsp. grated fresh lemon peel
- Prepare rice mix as label directs, but do not add butter or margarine.
- Meanwhile, in microwave-safe small bowl, place mushrooms and oil.
- Cover bowl with vented plastic wrap.
- Cook mushrooms in microwave oven on High 2 minutes, stirring once halfway through cooking.
- Set aside.
- When rice is done, stir in mushroom mixture, parsley, and lemon peel.
