Regal Kielbasa Squares
- 4 potatoes
- 1 14 cups butter
- 14 cup half-and-half
- 1 medium onion
- 1 (16 ounce) package sauerkraut (drained)
- 1 lb shredded farmer cheese
- 3 eggs
- 1 (16 ounce) package phyllo dough
- 1 lb cooked kielbasa
- salt
- pepper
- Preheat Oven to 350.
- Peel and boil the potatoes until tender.
- Whip with 1/4 cup of butter and the half-and-half.
- Set Aside.
- In a small pan, melt 1 stick of butter and cook onion until tender.
- Add sauerkraut and heat through.
- Set Aside.
- Mix farmers cheese with eggs in a small bowl.
- Set Aside.
- In a pan or microwave, melt 1 stick of butter.
- Layer 2 sheets of phyllo dough in a greased 9x13 baking dish.
- Brush phyllo sheets with melted butter.
- Layer 1/3 of the mashed potatoes, 1/3 of cheese mixture, 1/3 of sauerkraut mixture, and top with 1/3 of thinly sliced kielbasa.
- Top with 2 more sheets of phyllo.
- Repeat layering 2 more times, making sure to butter all phyllo sheets.
- Top with 2 more sheets of buttered phyllo.
- Bake for 30 minutes until golden brown in color.
- Cut into squares and serve.
