Curry of Beef Kenya

  1. In a large Dutch oven, saute onion and curry powder in oil over medium heat until onion is soft.
  2. Remove onions from pan.
  3. Increase heat to medium-high and brown beef (in batches, if necessary).
  4. To the crock pot, add onions, beef, salt, pepper and liquid(s).
  5. Cover and cook on LOW for 6 to 8 hours.
  6. About 1/2 hour before serving time, add fruit(s).
  7. You may thicken stew with cornstarch mixture, if liquid is too thin.
  8. Serve over hot rice with your choice of condiments.
