Curry of Beef Kenya
- 1 each onions sliced
- 1 teaspoon curry powder
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon black pepper ground
- 2 pounds beef stew meat, cut in 1/2 inch cubes
- 2 cups beef stock use beef broth, water or the liquid drained from your choice of fruits
- 2 cups fruit use apples, pears, canned pineapple chunks, raisins or any fruit you prefer, cut into bite-size pieces
- 1 x rice hot, cooked
- 1 x onions green, chopped
- 1 x coconut grated, unsweetened
- 1 x peanuts chopped
- 1 x chutney
- In a large Dutch oven, saute onion and curry powder in oil over medium heat until onion is soft.
- Remove onions from pan.
- Increase heat to medium-high and brown beef (in batches, if necessary).
- To the crock pot, add onions, beef, salt, pepper and liquid(s).
- Cover and cook on LOW for 6 to 8 hours.
- About 1/2 hour before serving time, add fruit(s).
- You may thicken stew with cornstarch mixture, if liquid is too thin.
- Serve over hot rice with your choice of condiments.
