Pizza Spinach Squares
- 1/4 pound pepperoni slices
- 1 cup flour, unbleached all-purpose plus 2 tablespoons
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 cup chicken broth, low salt
- 3 large eggs
- 1 1/4 pounds spinach frozen, chopped, thawed and squeezed dry
- 12 ounces mozzarella cheese shredded (3 cups)
- 1 each onions finely chopped
- 2 cloves garlic minced
- 1 ounce parmesan, parmigiano-reggiano cheese, grated (1/2 cup)
- Adjust oven rack to upper-middle position and heat oven to 375F (190C).
- Spray 13x9 inch baking dish with vegetable oil spray.
- Whisk together the flour, baking powder, salt, pepper, and cayenne together in a bowl.
- Add the chicken broth and eggs and whisk until smooth.
- Stir in spinach, mozzarella cheese, onion, pepperoni slices, and garlic until combined.
- Transfer mixture to prepared baking dish and sprinkle with Parmesan.
- Bake until browned on top and bubbling around edges, 40 to 45 minutes.
- Let cool in pan for 20 minutes.
- Cut into 24 equal-size squares and transfer to platter.
- Serve warm.
