Veggie/Pork Marinade
- 13 cups Extra Virgin Olive Oil
- 4 Tablespoons Red Wine Vinegar
- 4 Tablespoons Lemon Juice
- 1 whole Serrano Chile-seeded, And Mortared
- 1 teaspoon Salt
- 4 cloves Garlic-mortared
- Use a large plastic zip bag and pour in the oil/vinegar/lemon juice.
- Mince the garlic, chop the Serrano, then put them both in the mortar and make into a paste.
- Add the salt to the past, and then drop the paste into the bag with a spoon.
- Veggies taste great soaked in this marinade: whole mushrooms, asparagus, zucchini, red onion, bell peppers, red potatoes and artichoke hearts.
- Pork or chicken are also great in this marinade.
