BLT on Whole Wheat with Chipotle Mayo
- 2 slices Applewood Smoked Bacon
- 2 slices Whole Wheat Bread
- 2 leaves Romaine Lettuce
- 2 slices Beefsteak Tomato
- 3 Tablespoons Mayonnaise
- 1 Chipotle Pepper In Adobo Sauce
- For the mayo:
- Combine mayo and chipotle pepper in a food processor.
- Pulse until fully combined.
- Allow to rest in the fridge while you prepare the rest of the sandwich.
- For the sandwich:
- Cook bacon either in a skillet over medium heat or in the microwave, just until crispy.
- I cooked mine in the microwave for 2 minutes and 30 seconds and it was perfect.
- Toast bread until golden brown.
- Spread mayo on the inside of each slice of bread.
- Layer on bacon, tomato and lettuce.
