Tofu Ricotta Cheese
- 1 (16 ounce) package firm tofu, drained
- 1 tablespoon fresh lemon juice
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon nutritional yeast flakes
- 1/2 teaspoon balsamic vinegar
- 1/2 teaspoon minced garlic
- 1/2 teaspoon minced shallot
- 1/2 teaspoon chopped fresh basil
- 1/2 teaspoon chopped fresh parsley
- kosher salt to taste
- freshly cracked black pepper to taste
- Mash tofu with your hands in a large bowl until crumbly; add lemon juice, olive oil, nutritional yeast, vinegar, garlic, shallot, basil, parsley, kosher salt, and black pepper.
- Gently mix tofu mixture with a fork until well combined.
