Smoky Beans and Crispy Eggs

  1. Cook bacon in large skillet until crisp.
  2. Remove bacon from skillet; drain on paper towels.
  3. Discard all but 1 Tbsp.
  4. drippings from skillet; set aside.
  5. Combine beans, tomatoes and barbecue sauce in medium saucepan; cook on medium heat 5 min.
  6. or until heated through, stirring occasionally.
  7. Meanwhile, heat reserved bacon drippings in skillet.
  8. Slip cracked eggs, 1 at a time, into skillet, leaving spaces between eggs; cook 2 to 3 min.
  9. or until whites are set and crisp around edges, and yolks are cooked to desired doneness.
  10. Crumble bacon; stir into bean mixture.
  11. Top with eggs.
