Baked Pigs Trotters Recipe
- 4 x pigs trotters
- 1 x onion peeled and minced
- 2 x carrots peeled and minced
- 1 x bouquet garni squeeze of lemon juice healthy pinch of salt
- 225 gm sweetbreads peeled blanched and minced lOOg oyster mushrooms washed and minced
- 4 Tbsp. double cream
- 1 x salt and freshly grnd black pepper
- 50 gm melted butter
- Scald trotters in boiling water to remove any hairs then split down the middle on the underside.
- Place in a pan with onion carrots bouquet garni lemon juice and salt.
- Cover with water and cook for 2hr.
- Remove and drain.
- Carefully remove bones retaining the shape.
- Mix sweetbreads and mushrooms in a bowl.
- Stir in cream and season with salt and pepper.
- Spoon into the trotters and secure with string.
- Brush with butter and bake at Gas 6 400 degrees F/200 degrees C for 30 minutes or possibly till golden.
- Serve with lentils and baby turnips.
- Serves 4
