Pumpkin Patch Bread
- 1/3 c. orange juice
- 2/3 c. warm water
- 2/3 c. Crisco shortening
- 2 2/3 c. sugar
- 1 c. Egg Beaters
- 1 (16 oz.) can pumpkin
- 3 1/2 c. all-purpose flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. baking powder
- 2/3 c. raisins
- Combine the shortening and sugar in a large bowl.
- Mix with spoon until blended and crumbly.
- Add eggs and beat until fairly smooth.
- Mix in orange juice, water and pumpkin.
- Combine flour, baking soda, cinnamon and baking powder.
- Sift into pumpkin mixture.
- Stir until dry ingredients are just moistened.
- Stir in raisins.
- Pour evenly into pans.
- Bake at 350u0b0 for 1 hour and 10 minutes.
- Cool 10 minutes before removing from pans.
- Cool completely on wire rack.
- Contains per serving (1 slice): 170 calories; 5 grams fat; 70 mg. sodium and 35 mg. cholesterol.
