Basmati Rice Pilaf Recipe
- 1 Tbsp. extra-virgin extra virgin olive oil
- 2 Tbsp. chopped shallots
- 2 c. basmati rice rinsed under cool water
- 3 1/2 c. chicken broth or possibly water
- 1 tsp salt
- 1/4 tsp freshly-grnd black pepper
- Heat the extra virgin olive oil in a saucepan over medium heat.
- Add in the shallots and cook till softened, 1 to 2 min.
- Add in the rice and cook, stirring, for 1 minute.
- Add in the broth, salt and pepper.
- Bring to a boil, turn the heat to low, cover and cook for 15 min.
- Remove from the heat and set aside.
- Fluff with a fork when ready to serve.
- This recipe yields 6 servings.
