Hand battered tilapia

  1. Fillet and thoroughly wash your fish.
  2. In a mixing bowl add the flour and gradually add the water stirring constantly.
  3. Add the soy sauce and season and mix it all in.
  4. Get a frying pan and add as much oil as it takes to cover at least half of the fish and put on a medium-high heat.
  5. Take each fillet and cover it in the batter, turning on to each side to ensure it's covered.
  6. Once the pan is preheated, take each fillet and place in the frying pan.
  7. Cook until each side is golden brown, turning half way through.
  8. Once browned, place on some kitchen roll to drain off excess oil.
  9. Serve with a fresh salad or chips, with a sweet chilli our guava dipping sauce.
