Hand battered tilapia
- 1/2 cup water
- 1 dash light soy sauce
- 1/2 cup self raising flour
- 1 liter vegetable oil
- 4 tilapia fillets
- Fillet and thoroughly wash your fish.
- In a mixing bowl add the flour and gradually add the water stirring constantly.
- Add the soy sauce and season and mix it all in.
- Get a frying pan and add as much oil as it takes to cover at least half of the fish and put on a medium-high heat.
- Take each fillet and cover it in the batter, turning on to each side to ensure it's covered.
- Once the pan is preheated, take each fillet and place in the frying pan.
- Cook until each side is golden brown, turning half way through.
- Once browned, place on some kitchen roll to drain off excess oil.
- Serve with a fresh salad or chips, with a sweet chilli our guava dipping sauce.
