CG CHICKEN with LEMON & GARLIC

  1. Slice the chicken breast into thin strips no bigger than a finger.
  2. Place thinly sliced strips into a large bowl/dish.
  3. Coat with approx 1 tbsp of olive oil.
  4. Add salt and black pepper as you please.
  5. Add the tbsp of Paprika and mix thoroughly.
  6. *OPTIONAL: Cover with plastic wrap/cling/aluminum foil/ something tight- and set in fridge 30 minutes.
  7. Heat 2 tbsp olive oil in a large frying pan over high heat.
  8. Add the shallots and stir fry 2 minutes, add the garlic and stir fry 1 minute, add the thinly sliced chicken strips along with 3 tbsp chopped parsley and stir fry for 3 to 4 minutes until cooked through.
  9. Add lemon juice, taste chicken, and adjust seasoning accordingly.
  10. Serve hot with lemon wedges, garnished with flat leaf parsley.
  11. *OPTIONAL: serve with crispy fried potato rounds/wedges and a salad for a complete meal.
