Red Beans And Rice

  1. Clean and wash kidney beans.
  2. Let soak overnight.
  3. Drain and wash beans.
  4. Cover beans with water in large cast-iron pot.
  5. Bring to boil.
  6. Add remaining ingredients.
  7. Everything should be chopped and/or diced.
  8. Bring to a boil.
  9. Reduce heat and cook slowly until beans are soft and other ingredients are tender.
  10. Season to taste with pepper, Tabasco and salt.
  11. You may remove some beans (2 cups) and puree in blender and return to pot to add thickness or body. When done, remove bay leaf and crab boil.
  12. Serve over cooked rice. (Usually takes 4 to 6 hours.)
