Rhubarb Custard Pie

  1. Place the diced rhubarb in the prepared pie shell.
  2. In a large bowl, mix beaten eggs, milk and extract until well blended.
  3. Add sugar and flour to the mixture.
  4. Pour mixture over the rhubarb in the pie shell.
  5. Bake at 450 degrees for 10 minutes.
  6. Then reduce heat to 325 degrees and bake for another 30 minutes or until set.
