Pear Clafouti

  1. In a shallow dish, place pears and pour cider over top, coating well, Allow to marinate for about 30 minutes, stirring occasionally,.
  2. Meanwhile, preheat oven to 400F Butter a 10-inch round porcelain baking dish and sprinkle with 2 teaspoons vanilla sugar.
  3. In a medium bowl, place eggs and remaining 1/2 cup vanilla sugar.
  4. Beat with whisk or mixer for 2 minutes until smooth; add flour, salt, ginger, and creme fraiche .
  5. Drain pears, reserving liquid.
  6. Add reserved liquid to egg mixture.
  7. Arrange marinated pear halves in bottom of baking dish and pour egg mixture over top.
  8. Bake in center of oven until golden, about 30 minutes.
  9. Before serving, sprinkle with coarse sugar.
  10. Cut into slices and garnish each piece with a sprig of rosemary.
