AMIEs Grilled MELON with STRAWBERRY
- 50 grams white sugar
- 20 ml lemon liquour
- 1 melon, halved and seeded (cantaluopo is the best choice)
- 200 grams fresh strawberry or raspberry
- 1 mascarpone to serve (optional)
- 1 fresh ground pepper
- 50 ml water
- Heat water and sugar together in a small saucepan over low heat for 5 minutes or until sugar melts.
- Remove from the heat.
- Let it cool.
- Pour the lemon liquour into the syrup, stirring to combine.
- Scatter and spread the syrup over the top of melon.
- Grill for 10 minutes on each side.
- Sprinkle abundant pepper over the top of the melon.
- Stuff the melon with strawberrys and arrange upright in a serving dish.
- Serve drizzled with syrup or mascarpone, if desired.
