Tuna and Potato Pizza Toast

  1. Wash the potato, wrap in plastic wrap and microwave until tender (about 4 minutes at 500 W).
  2. Peel the potato (be careful since it's hot) and mash up lightly.
  3. Add the drained canned tuna to the mashed potato, and mix in 1 to 1 1/2 tablespoons of mayonnaise.
  4. Spread some ketchup on the bread.
  5. Spread the potato-tuna mixture on top, sprinkle on the melting cheese, and squeeze on some mayonnaise to taste.
  6. Bake in an oven until browned.
  7. Sprinkle with some black pepper to taste!
