Sausage Stuffed Mushrooms
- 24 mushrooms, wiped clean
- 8 ounces spicy sausage
- 1 small garlic clove, finely minced
- 1 tablespoon finely minced scallions or 1 tablespoon chives
- 1 small egg, beaten
- 23 cup soft white breadcrumb
- 12 teaspoon soy sauce
- Preheat the oven to 350F
- Stem the mushrooms and set the caps aside.
- Coarsely chop the stems.
- Cook the sausage, stems, garlic, and scallion until the meat is lightly browned, making sure to break up any large lumps of sausage.
- Remove from heat and cool for 15 minutes, then, mix in the egg, bread crumbs, and soy sauce.
- Mound the sausage mixture into the mushroom caps and arrange in a ungreased baking dish.
- Bake for 10 to 12 minutes or until bubbling and browned.
