Chicken, Pear and Craisin Salad

  1. Brush chicken fillets with oil and sprinkle with pepper.
  2. Cook in a preheated frying pan or on a bbq plate for 4-5 minutes each side until golden and cooked through.
  3. Allow to cool.
  4. Slice.
  5. Assemble rocket, sliced pears and chicken onto serving plates.
  6. Sprinkle with pistachio nuts and craisins.
  7. Drizzle with dressing and serve.
