Tami's Baked Eggs in Tomato Sauce
- 1 (28 oz.) can whole plum tomatoes
- 1 small onion, diced
- 1/2 each red & green peppers, slice into strips
- 2 garlic cloves, minced
- 1 bay leaf
- to taste salt & pepper
- 1-2 Tbls oregano
- 2 eggs per person
- In a bowl break up whole tomatoes with your hands, set aside.
- Preheat oven to 400.
- Spray a baking dish with cooking spray, Add cooked tomato sauce.
- Add 2 eggs person.
- Baked for 10 - 15 minutes.
- Serve with good crusty bread.
- ENJOY!
