Bacon-Chestnut Wraps
- 8 slices bacon, halved
- 1 large green pepper
- 2 Tbsp. soy sauce
- 2 Tbsp. plum or grape jelly
- 1 (8 oz.) can water chestnuts
- 2 Tbsp. water
- 2 Tbsp. chili sauce
- Place half of bacon on a microwave roasting rack.
- Cover with paper towels (I put mine in the oven on a bread pan because I save the bacon grease).
- Cook on High for 1 1/2 to 2 minutes, or until bacon is slightly brown, not completely cooked.
- Repeat with remaining bacon slices.
- Wrap each piece of bacon around a water chestnut and a piece of green pepper; secure with a toothpick. Place in an 8 x 8-inch baking dish.
- Stir together remaining ingredients.
- Mix well and pour over wrapped water chestnuts. Refrigerate for 2 hours.
- Microwave at High for 6 to 9 minutes or until done.
