Wheat Wraps
- 2 cups unbleached all-purpose flour
- 2 cups whole wheat flour
- 1 teaspoon sea salt
- 2 teaspoons baking powder
- 13 cup safflower oil
- 1 12 cups hot water
- Heat up water until boiling.
- In a large bowl, stir flour, salt and powder.
- Stir in safflower, until it is like coarse meal.
- Stir in 1 1/4 cups of boiling water.
- Use a spoon, mixture will be very hot.
- Then knead with hands until smooth.
- Don't over knead.
- Cover with plastic wrap and let sit for 15 minutes.
- Divide dough into 10 balls.
- Cover with plastic wrap again for 15 minutes.
- Heat a well seasoned cast iron skillet until hot.
- Roll out each ball into about a 9 to 10 inch circle.
- Cook wraps for about 30 seconds each side, until just before brown spots appear.
- Cool slightly.
- Or cool completely and store in zip lock type bags in fridge.
