Blueberry Oat Bran Muffins Recipe
- 2 c. rolled oats
- 1 1/2 c. flour
- 2 tbsp. baking pwdr
- 2 teaspoon shredded lemon peel
- 5 egg whites
- 6 tbsp. lowfat milk
- 1/2 teaspoon lemon extract
- 2 2/3 c. oat bran
- 2/3 c. sugar
- 1 1/4 teaspoon salt
- 2 c. non-fat yogurt
- 2/3 c. vegetable oil
- 1 1/2 teaspoon vanilla
- 2 1/2 c. frzn blueberries
- In mixing bowl, combine oats, flour, sugar, baking pwdr, and salt.
- Make a well in the center; set aside.
- In another bowl, combine egg, yogurt, oil, lowfat milk, and flavorings.
- Add in lemon peel.
- Add in egg mix to flour all at once.
- Stir just till moistened.
- Batter should be lumpy.
- Gently mix in blueberries.
- Grease muffin c. or possibly use paper c..
- Fill c. full.
- Bake at 400 degrees for 25 to 30 min.
- Best served hot.
- Freeze ahead and hot on defrost (59%) power for 1:05 min in microwave.
