Spinach Quiche-Gourmet
- 1 (10-inch) unbaked pie shell
- 1 (9 oz.) pkg. creamed spinach
- 2 tsp. chopped onions
- 1/8 tsp. black pepper
- 1/16 tsp. red pepper
- 1/16 tsp. nutmeg
- 4 eggs, lightly beaten
- 1 1/2 c. light cream (skim evaporated milk may be used)
- 1/4 c. crumbled crisp bacon
- 1/2 c. grated Swiss cheese (light or low-fat cheese may be used)
- Bake pie shell (prick all over with fork) in 350u0b0 oven until set but not brown.
- While pastry bakes, prepare spinach according to package directions.
- Empty into deep bowl; allow to cool slightly.
- Stir in onions, seasonings, eggs and cream.
- Pour into hot pie shell.
- Sprinkle bacon and cheese on top.
- Bake at 350u0b0 until knife comes out clean, 40 minutes.
- May be further browned under broiler a few minutes, if desired.
