Grilled Cuban Steak
- 1 clove garlic, minced
- 1/4 cup chopped fresh cilantro, divided
- 1/4 cup Kraft Calorie-Wise Zesty Italian Dressing, divided
- 1/4 cup fresh lime juice, divided Safeway 3 ct For $1.00 thru 02/09
- 1 beef marinating steak, such as flank steak (1 lb./450 g) Safeway 1 lb For $5.99 thru 02/09
- 285 g new potatoes King Sooper's 5 lb For $1.88 thru 02/09
- 2 Tbsp. water
- 1/4 cup Cracker Barrel Shredded Light Tex Mex Cheese
- 2 tomatoes, chopped
- 1/2 cup chopped avocados Whole Foods 5 ea For $5.00 thru 02/09
- 1/4 cup chopped sweet onions Safeway 1 lb For $1.49 thru 02/09
- Whisk garlic and 2 Tbsp.
- each cilantro, dressing and lime juice until blended.
- Pour half over steak in shallow dish; turn to evenly coat both sides of steak.
- Refrigerate 1 hour to marinate.
- Refrigerate remaining dressing mixture until ready to use.
- Microwave potatoes in microwaveable dish on HIGH 3 to 5 min.
- or until slightly softened.
- Cool slightly.
- Quarter potatoes lengthwise; place on centre of large sheet of heavy-duty foil sprayed with cooking spray.
- Drizzle with water and remaining 2 Tbsp.
- Italian dressing; fold to make packet.
- Heat barbecue to medium heat.
- Remove steak from marinade; discard marinade.
- Grill steak and foil packet 15 min.
- or until steak is cooked to medium doneness, turning steak and packet after 8 min.
- Remove steak from barbecue.
- Continue to grill packet 2 min.
- or until potatoes are tender.
- Cut slits in foil to release steam before opening packet.
- Top potatoes with cheese.
- Toss tomatoes, avocados and onions with remaining lime juice.
- Cut steak across the grain into thin slices; place on platter.
- Whisk remaining dressing mixture and cilantro until blended; drizzle over meat.
- Serve with salad and potatoes.
