Chicken Polonaise Recipe
- 4 chicken breasts, split, halved & skinned
- 1 teaspoon salt
- 1/2 teaspoon marjoram
- 1/4 teaspoon pepper
- 1 c. med. cream or possibly evaporated lowfat milk
- 2 Large eggs
- 3/4 c. butter
- 1/2 c. fine bread crumbs
- Lb.
- chicken pcs into 1/2" thickness.
- Season with salt, pepper and marjoram.
- Place in shallow dish and add in cream.
- Chill for at least 2 hrs, preferably overnight.
- Shortly before serving; beat the Large eggs and add in 1/4 c. of the cream mix from the chicken.
- Dip the chicken pcs in this mix and roll in bread crumbs.
- Heat butter in skillet, add in chicken and cook, covered over medium heat for 8 to 10 min, turning once.
- Serve immediately.
- Serves 6 to 8.
