Date Cherry Protein Energy Balls
- 1 cup Medjool Dates, Soaked In Hot Water For 10 Minutes
- 1/2 cups Dried Cherries (soaked In Hot Water For 10 Minutes)
- 23 cups Walnuts
- 1/4 cups Chocolate Protein Powder
- 1 Tablespoon Agave Nectar
- 1/2 Tablespoons Vanilla Extract
- 1 Tablespoon Coconut Oil
- 1/2 cups Shredded Coconut
- Line a baking sheet with parchment paper.
- Make sure to soak the dates and cherries as detailed above.
- This way they will soften and the energy balls will be moist.
- Once soaked, drain and set aside.
- Using a powerful blender, pulse nuts until roughly chopped.
- Be careful not to turn them into a liquid.
- Transfer to a bowl.
- Process the soaked (and drained) dates and cherries for 1 minute.
- Combine date cherry mixture with chopped walnuts.
- Add protein powder, agave nectar, vanilla extract and coconut oil.
- Mix well and form a ball from the dough.
- Using a small ice-cream scoop, scoop out balls from the dough.
- Then roll them by hand, toss to coat them in the shredded coconut and place on the parchment paper lined tray.
- Chill for 10 minutes.
- Store in an airtight container in the fridge.
