Beef & Rice Tortilla Casserole

  1. In a large size sauce pan, bring to a boil the water, salsa, taco seasoning, and meat.
  2. Then add in the instant rice and lower heat to a simmer.
  3. Cook for another 5 minutes.
  4. Remove from heat and let stand covered for 5 minutes.
  5. In a 13x9 pan that has been lightly sprayed with oil, layer 3 tortillas.
  6. You might need to tear them to make sure they cover the bottom of the pan.
  7. Next place half of the rice/meat mixture over the tortillas.
  8. Then layer again.
  9. Top with cheese.
  10. Bake in a 350 degrees F oven for 40 minutes.
