Beef & Rice Tortilla Casserole
- 2 cups Water
- 1 cup Mild Salsa
- 1 envelope (1.25 Oz. Packet) Taco Seasoning
- 1 cup Cooked And Shredded Beef
- 2 cups Instant Rice
- 6 whole Flour Tortillas
- 1 cup Shredded Cheese
- In a large size sauce pan, bring to a boil the water, salsa, taco seasoning, and meat.
- Then add in the instant rice and lower heat to a simmer.
- Cook for another 5 minutes.
- Remove from heat and let stand covered for 5 minutes.
- In a 13x9 pan that has been lightly sprayed with oil, layer 3 tortillas.
- You might need to tear them to make sure they cover the bottom of the pan.
- Next place half of the rice/meat mixture over the tortillas.
- Then layer again.
- Top with cheese.
- Bake in a 350 degrees F oven for 40 minutes.
