Best Breakfast Tacos
- 1 tablespoon extra virgin olive oil
- 1 tablespoon butter
- 2 large red potatoes
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon thyme
- 1 teaspoon season salt
- 1 lb jimmy dean ground hot sausage
- 4 eggs
- 1 12 tablespoons milk
- 4 flour tortillas
- 1 cup shredded cheddar cheese
- Wash and dice the red potatoes.
- I usually use two red potatoes and when diced it serves about 4 people.
- On stovetop, heat Extra virgin olive oil.
- Add diced red potatoes, a dollop of butter or margarine, salt, pepper, thyme and season salt (to your taste I like my food really seasoned).
- Add 1/4 cup of water and cover on medium heat to steam the potatoes, stirring occasionally.
- Heat another pan and add ground sausage, chop up the sausage as it cooks.
- In a bowl, beat eggs and add a little milk.
- In an additional pan scramble the eggs.
- All three pans should be done-potatoes, sausage, and eggs.
- Combine onto a tortilla and top with cheese.
- Enjoy!
