Luxury Fish Pie

  1. Start by making the topping.
  2. Put the carrots and swede in a large pan of lightly salted boiling water and cook for 25-30 minutes, until tender.
  3. Drain, return to the pan and mash.
  4. Allow to cool.
  5. Stir in the beaten egg and yoghurt, season, and set aside.
  6. Preheat the oven to 200C/Gas 6.
  7. Mix together the yoghurt, cream cheese, dill, and parsley.
  8. Season well and set aside.
  9. Place the hard-boiled eggs, cod, haddock, prawns, and lemon juice in a large mixing bowl.
  10. Pour over the cream cheese mixture, season, and mix well.
  11. Transfer this mixture to a deep ovenproof dish.
  12. Spoon the topping evenly over the surface, then ruffle with a fork.
  13. Place in the oven and bake for 20-25 minutes, until the topping is lightly browned.
  14. Serve immediately with steamed green vegetables.
