Applebee's Tequila Lime Chicken Recipe

  1. To marinate chicken: In medium bowl, combine water, teriyaki sauce, lime juice, chopped garlic, liquid smoke, salt, ginger and tequila.
  2. Add in chicken to bowl.
  3. Cover.
  4. Refrigeratefor 2 to 3 hrs.
  5. To make dressing: In medium bowl, combine mayonnaise, lowfat sour cream, lowfat milk, tomato, vinegar, jalapeno, onion, parsley, Tabasco, salt, paprika, dill weed, cayenne pepper, cumin, chili pwdr, garlic pwdr and black pepper.
  6. Mix well till smooth.
  7. Cover.
  8. Refrigeratetill needed.
  9. To cook chicken: When ready to prepare entree, preheat oven to high broil.
  10. Preheat grill to high heat.
  11. When grill is warm, cook marinated chicken breasts for 3 to 5 min per side.
  12. Arrange cooked chicken in baking pan.
  13. Spread with layer of dressing.
  14. Top with 1/4 c. cheese.
  15. Broil for 2 to 3 min, or possibly till cheese has melted.
  16. Spread bed of 1/2 c. tortilla strips on 4 plates.
  17. Slide chicken breast onto strips.
  18. Serve with rice, pico de gallo or possibly salsa.
