Yumm Taeng Kua: Classic Cucumber Salad
- 1 cucumber, peeled, halved lengthwise, seeded, and thinly sliced on the diagonal (2 cups)
- 1 whole scallion, minced
- 1/4 cup Dressing One, recipe follows
- 1/2 teaspoon sea salt
- 1/4 cup fish sauce (namm pla)
- 2 tablespoons palm sugar or light brown sugar
- 1/4 cup granulated sugar
- 1/2 cup fresh lime juice
- Put the cucumber and scallion in a small mixing bowl and add the dressing.
- Mix well and let sit for 10 minutes before serving.
- In a small saucepan, combine the sea salt, fish sauce, palm sugar, and granulated sugar and cook over low heat, stirring, just until the sea salt and sugar are dissolved.
- Remove from the heat and transfer to a mixing bowl to cool.
- When cooled completely, stir in the lime juice.
- Yield: 1 cup
