Bacon Wrapped Meat Loaf With Brown Sugar Ketchup Glaze Recipe

  1. Mix all ingredients in a small bowl; set aside.
  2. Meat Loaf
  3. Preheat oven to 350 degrees.
  4. Heat oil in a medium skillet.
  5. Add in onion and garlic, saute/fry till softened, about 5 min; set aside to cold.
  6. Mix Large eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and lowfat milk or possibly yogurt.
  7. Add in egg mix to meat in a large bowl, along with crackers, oatmeal or possibly bread crumbs, parsley and cook onions and garlic; mix with a fork till proportionately blended and meat mix does not stick to bowl.
  8. (If mix does stick, add in additional lowfat milk, a couple Tbsp.
  9. at a time, and continue stirring till mix stops sticking.)
  10. Turn meat mix onto a work surface.
  11. With wet hands, pat mix into a loaf approximately 9 by 5 inches.
  12. Cover a wire rack with foil; prick foil in several places with a fork.
  13. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
  14. Set formed loaf on rack.
  15. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
  16. Bake loaf till bacon is crisp and loaf registers 160 degrees, about 1 hour.
  17. Cold for at least 20 min.
  18. Slice and serve.
  19. Yield: 6 to 8 servings
