Sausage Balls
- 1 1/2 lb. ground pork
- 1/2 c. seasoned dried bread crumbs
- 1 Tbsp. grated onion
- 1 egg
- salt
- 2 Tbsp. butter
- 2 Tbsp. flour
- pepper
- 1 c. milk
- In a large bowl, mix the pork, bread crumbs, onion, egg and salt.
- Shape into 1-inch meatballs.
- Melt butter in skillet over medium heat.
- Cook meatballs until well browned.
- Remove meatballs and put in bowl as they brown.
- Pour off all but 2 tablespoons drippings from skillet.
- Into remaining drippings, stir in flour, pepper and 1 teaspoon salt.
- Cook 1 minute.
- Gradually stir in milk and 1 cup water.
- Cook until mixture boils and thickens slightly, stirring constantly.
- Return meatballs to skillet.
- Heat to boiling.
- Reduce to low, cover and simmer 10 minutes.
- Makes 6 main dish servings.
