Sausage Balls

  1. In a large bowl, mix the pork, bread crumbs, onion, egg and salt.
  2. Shape into 1-inch meatballs.
  3. Melt butter in skillet over medium heat.
  4. Cook meatballs until well browned.
  5. Remove meatballs and put in bowl as they brown.
  6. Pour off all but 2 tablespoons drippings from skillet.
  7. Into remaining drippings, stir in flour, pepper and 1 teaspoon salt.
  8. Cook 1 minute.
  9. Gradually stir in milk and 1 cup water.
  10. Cook until mixture boils and thickens slightly, stirring constantly.
  11. Return meatballs to skillet.
  12. Heat to boiling.
  13. Reduce to low, cover and simmer 10 minutes.
  14. Makes 6 main dish servings.
