Sausage With Warm Vinaigrette
- 5 Italian sausage
- 3 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 (10 ounce) package frozen spinach
- 2 tablespoons butter
- 1 teaspoon lemon juice (may be omitted)
- salt and pepper
- parmesan cheese
- Cook sausage as directed.
- Remove sausage when fully cooked and set aside leaving your pan on same heat.
- Mix together oil, viniger, and mustard and put in pan.
- Deglaze the pan with a whisk breaking up the mustard till sauce is even, scraping up all the dark pieces.
- Place sausage back in pan, cover with sauce, remove from heat and keep warm.
- Cook spinach as directed.
- Melt butter with lemon juice and mix with spinach.
- Season with salt and pepper.
- Serve sausage over spinace with sauce and parmisean cheese.
