Hungarian Borscht
- 4 large beets
- 3 large potatoes
- 2 large carrots Target 2 lb For $3.00 thru 02/06
- 1 Spanish onion King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 rutabaga
- 1 bottle (250 mL) Kraft Fat Free Catalina Dressing
- 2 tsp. dried dill weed
- 1 tsp. each: caraway seed and freshly ground black pepper
- 1 can (28 fl oz/796 mL) whole tomatoes, crushed
- 3 cans (10 fl oz/284 mL) condensed beef broth
- 2 cups each: finely sliced red and green cabbage
- PEEL and chop vegetables, place in a large, heavy saucepan.
- Add dressing and seasonings; stir and cook on medium-high heat until vegeatbles are tender.
- Add tomatoes and broth; bring to boil.
- Reduce heat and simmer 1 hour.
- SERVE hot or cold with sour cream or yogurt.
