Winter Fruit Cobbler
- 2 baking apples, pared, cored and thinly sliced
- 2 pears, pared, cored and thinly sliced
- 1-1/2 cup grapes, halved and seeded
- 2 tbsp. flour
- 1/2 cup brown sugar, packed
- 1/2 tsp. cinnamon
- 1 tbsp. orange juice
- 1 cup flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/4 cup sugar
- 1 egg, slightly beaten
- 1/4 cup milk
- 1/4 cup butter
- margarine, melted
- 1 tsp. fresh orange rind, grated
- Combine apples, pears and grapes.
- Add flour.
- brown sugar, cinnamon and orange juice; mix well.
- Turn into a greased 1-1/2 quart baking dish.
- Bake for 30 minutes at 425F.
- Spoon Topping over baked fruit; spread evenly over top.
- Bake 30 minutes longer, or until top is golden brown.
- Topping: Mix together flour, baking powder, salt and sugar.
- In another bowl, beat together eggs, milk, melted butter and orange rind.
- Pour liquid ingredients into dry ingredients.
- Stir well.
