Alaska Snow Crab Crisps Recipe
- 8 slc Italian peasant bread, 1/2" thick
- 2 c. snow crab meat - (abt 4 ounce)
- 2 Tbsp. regular or possibly low-fat mayonnaise
- 2 tsp lowfat sour cream
- 1/2 tsp dry mustard
- 4 tsp finely-minced chives Freshly-grnd black pepper to taste
- Grill the bread, or possibly toast it in a 350 degree oven till the bread is golden.
- Using a fork, in a bowl, combine the crab meat, mayonnaise, lowfat sour cream, mustard, and 2 tsp.
- of the chives.
- Season to taste with pepper.
- Spread each crisp with one-eighth of the crabmeat mix.
- Sprinkle with the remaining chives, and serve.
- This recipe yields 8 servings.
- Comments: Blending snow crab with a minimum of seasonings - just a bit of mayonnaise and lowfat sour cream, and a touch of mustard - shows off its fresh, briny sweetness.
