Overnight Salad
- 1 head lettuce
- 1/2 c. chopped celery
- 1/4 c. chopped red onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped, peeled cucumber
- 1/2 c. grated Parmesan
- 1/2 lb. crisp bacon
- 1/2 c. sour cream
- 1/2 c. mayonnaise
- 2 Tbsp. vinegar
- 1 Tbsp. sugar
- tomato wedges
- juice of 1 large lemon
- Break lettuce into bite-size pieces.
- Cover bottom of shallow glass pan.
- In layers, sprinkle over lettuce: celery, onion, peppers and cucumber.
- Combine sour cream, lemon juice, mayonnaise, vinegar and sugar.
- Pour mixture over salad, but
- do not toss.
- Sprinkle with Parmesan cheese.
- Cover and refrigerate at least 3 hours or overnight.
- Before serving, crumble bacon over top and decorate with tomato wedges.
