Nutty Fruit Cocktail Cake
- 1 cup flour
- 1 cup sugar
- 1 cup pecans
- 1 teaspoon baking soda
- 12 teaspoon salt
- 15 ounces fruit cocktail, with 3 tbsp liquid reserved
- 14-12 cup brown sugar
- Drain off liquid of fruit cocktail reserving 3 Tbsp of the liquid.
- Combine flour, sugar, pecans, baking soda, salt and fruit cocktail with reserved liquid.
- Pour into an 8x8 greased and floured pan.
- Sprinkle top with brown sugar.
- Bake at 350 degrees for 1 hour.
- Check for doneness at 45 minutes.
- Can subsitute different nuts for different tastes.
- I have found that 1/4 c is enough brown sugar.
- We love this with french vanilla ice cream!
