Stuffed Nicoise Baguette
- 1 whole wheat baguette (400 g)
- 1/4 cup Miracle Whip Calorie-Wise Spread Family Dollar $3.50 thru 02/07
- 2 Tbsp. finely chopped Kalamata olives
- 1 tsp. Dijon mustard
- 2 hard-cooked eggs, sliced
- 1 can (170 g) tuna, drained, flaked
- 1 cup thin English cucumber slices
- 1 tomato, thinly sliced
- 3/4 cup Cracker Barrel Shredded Part Skim Mozzarella Cheese
- 1-1/2 cups tightly packed baby spinach leaves
- Cut baguette horizontally in half; remove bread from centre of each half, leaving 1-inch-thick shell.
- Reserve removed bread for another use.
- Mix Miracle Whip, olives and mustard until well blended; spread onto insides of bread shells.
- Fill bottom bread shell with remaining ingredients; cover with top of bread.
- Wrap tightly in plastic wrap.
- Refrigerate 1 hour.
- Cut into 4 pieces to serve.
