Nutty Granola Bars
- 12 cup no-sugar-added peanut butter
- 12 cup apple juice concentrate
- 2 tablespoons oil
- 1 teaspoon cinnamon
- 2 cups oatmeal
- 2 cups puffed wheat cereal
- 23 cup almonds, finely chopped
- 23 cup walnuts, finely chopped
- 1 cup golden raisin, finely chopped
- Preheat oven to 325 degrees.
- Toast the oats and almonds in the oven for 10 minutes, stirring frequently.
- In a pot combine the oil, juice concentrate, and peanut butter.
- Cook over medium heat, stirring costantly until peanut butter is melted.
- Add cinnamon, toasted oats and almonds, cereal, and raisins.
- Stir well until mixture is totally combined.
- Spread the mixture evenly in a cookie sheet lined with parchment paper.
- Press down firmly.
- The thinner the layer, the crunchier the bars will be.
- Bake for 30 minutes.
- before the bars cool, slice into desired size bars.
