Vegetable Bolognese & Linguine
- 8 ounces, weight Linguine Pasta Noodles (Or Your Favorite)
- 4 ounces, weight Ground Beef Or Ground Turkey
- 1 whole Yellow Onion, Diced
- 1 whole Carrot, Peeled, Diced
- 1 stalk Celery Heart, Diced
- 1/2 teaspoons Black Pepper
- 1 teaspoon Italian Seasoning Mix
- 12 ounces, fluid Diced Tomatoes
- 1/2 cups Frozen Mixed Vegetables (Corn, Green Beans, Peas)
- 1/4 cups Grated Parmesan Cheese (optional)
- In a large skillet over medium heat, add ground beef or ground turkey meat, diced onions, diced carrot, diced celery, and cook for several minutes, until meat is no longer pink.
- Drain and return to skillet.
- Add black pepper and Italian seasoning and stir well.
- Add diced tomatoes and stir to combine.
- Add frozen veggies, educe heat to low, cover with a lid and simmer 15 minutes, stirring occasionally.
- In a pot of boiling water, add linguine (or your favorite pasta) and cook according to package instructions.
- Drain and set aside.
- To serve, add cooked pasta to plates.
- Ladle bolognese on top, and garnish with grated cheese if desired.
- We love this with toasted crusty bread.
